Just Time To Relax And Snooze
Ah, what a wonderful day. You saw some wonderful old historic sites, hiked around the lake, took the kids to the park, rode the horses up the mountain, shopped the outlet malls or just lounged back in the lounge chare reading that great book and watching the wildlife wander through your campsite. You glance at your watch. Dinner! Ugh, that sounds like work and I'm on vacation! It's just time for that needed snooze.

Depression Food, A One Pot Meal
Potatoes
Onion
Mushrooms
Ham
Butter
Corn
Seasonings (salt and pepper)
Cook peeled potatoes in large pot. Just before completely cooked, add sliced onion. Drain off most of the water. Add bite-sized pieces of ham, mushrooms, corn - fresh if available or any other vegetable your family likes. Cook until heated through. Add butter and seasonings and serve.  We also love to cook this over a camp fire whenever possible. 
 
Easy Homemade Chicken Soup
1 can of canned chicken
6 cups drinking water
3-6 chicken boullion cubes
Garlic Salt to taste
Dehydrated onion to taste
Dehydrated vegetable flakes
2 cups pasta or noodles
With the exception of the pasta, add all other ingredients to the pot, including the liquid from the canned chicken. Bring to a boil, then add pasta and cook for the amount of time recommended for the pasta on the back of the box. Salt and pepper to taste.
This recipe can also be cooked over a campfire.
 
Bean Soup
2 cans black beans (undrained)
1 can refried beans
1 large can tomatoes
1 can water
1 sauté onion
Chop onion and sauté.  Dump contents of cans together and warm.
