Mixed Potatoes |
2 to 3 large russet potatoes 1 large sweet potato 1 green pepper 1 medium yellow onion (Vidalia is delicious) 4 T. oil (this amount will need to be adjusted to your liking) salt and pepper to taste
Wash and peel potatoes. Slice into 1/2" thick chunks. Also, thinly slice onion and green pepper. Combine and cook with oil in large skillet. Use medium heat for about 30 minutes |
