1/2 Cup Brown sugar, packed 1 Tbsp. Curry powder
1/2 Tsp. Black pepper, ground 1 Tbsp. Garlic salt 1/4 Cup Golden raisins 1 1/4 Cups White Rice 18 oz. Can Pineapple chunks in juice
8 oz. Can Chopped Mushrooms
6 serving-size pieces Boneless chicken 2 Tbsp. Olive oil 2 Large onions, diced 1 Cup Orange juice 1/2 Cup Water
At home, seal up the first six ingredients in a zipper top bag. Put them in the RV pantry with the cans of pineapple and mushrooms. Stock other ingredients in your RV refrigerator. Brown the chicken in hot oil in a big skillet, add the onions, then stir in the rice mixture. Reduce heat and add the undrained pineapple, the drained mushrooms, orange juice, and water. Cover and simmer over low heat until the chicken and rice are tender. Complete the menu with buttery cornbread, slices of chilled tomato aspic on beds of lettuce, and icy spring water. For dessert, jog to the campground store for popsicles to slurp as you stroll back to your campsite ( I walk ). This fruity, filling, one pot meal is ideal for your first night on the road. Use a skillet with a non stick lining, and it will swish clean in cold water with a wipe of a paper towel. |
